Egg-citing times!

Sometimes we find ourselves with so many eggs that we need to get creative. Hens  will start to produce more the the spring, usually March-May before it gets warm. Once the hot days of summer start, they begin to slow down a tad.  Here are some of our favorite recipes!

Here is one of our favorite ways to make the duck eggs. The yolks of duck eggs are higher in fat and protein, and that results in creamier and thicker filling. If you want to take your deviled eggs up a notch, try our duck eggs for your next batch!

This eggnog is more of a lighter version. Instead of heavy whipping cream, I use half and half, which results in a less thick version. As an alternative to sugar, I choose a mix of honey and maple syrup to sweeten it up. When using our farm fresh eggs, you'll get a rich yellow color to your eggnog as well, complete with the best nutrients you can only get from fresh pastured eggs!
